Job Description
**This is a Sunday thru Thursday position from 10:00 p.m. to 6:00 a.m. shift. **
Position Summary:
The cheese maker will be responsible for coordinating production schedules and the making of the cheese at the vats. Monitoring and controlling cheese make vats, using touch control screens and monitoring pH meters and EFVs. Duties will also require various CIP systems for cleaning the vats, curd lines and other systems. Cheese maker must be able make decisions and accurately to record the data required for all the processes.
Primary Responsibilities:

Knowledge and understanding GMP’s.

Ability to read chart, setting, gauges and thermometers.

Feel of curd.
-
Stir out time.
-
Pre down.
-
Pump over.
-
Knowledge of sampling equipment and sample handling and storage.
-
Documents all runs for the production day.
-
Accurately run all tests necessary for quality control.
-
Checks and documents product temperatures, times.
-
Perform all other assignments as required.
-
Effective communication with supervisors, employees, quality assurance and maintenance.

Assist in training as appropriate.
-
Follows standard operating procedures.
-
Report mechanical issues to supervisors immediately.
-
Work well and have a good communication with all other co-workers.
-
Responsible for complying to all Safe Quality Food (SQF) polices/procedures and requirements.

Responsible for any other activity as directed by supervisor.
Key Activities:
-
Observes and evaluates performance of workers to ensure conformance to manufacturing requirements.
-
Identify and implement measures to improve production methods, equipment performance and quality of product.
-
Supervises staff of 6 to 8 employees.
-
Evaluating PH levels and finish of products to ensure quality Product.
-
Ensure that proper cleaning and sanitation procedures are followed.

Responsible for following and enforcing Safety (OSHA) regulations and procedures.

Responsible for complying to all Safe Quality Food (SQF) polices/procedures and requirements.
-
Other duties as assigned by Plant Manager.

Necessary Experience:
-
High School or equivalent (preferred).
-
Cheese Maker and Pasteurization License.
-
Knowledge of Good Manufacturing Procedures (GMP) preferred.
-
Basic Mechanical Experience (preferred).
Skills Required:
-
Must be a licensed cheesemaker.
-
Regular overtime will be required.
-
Knowledge of proper use of equipment, materials, and supplies.
-
Ability to work independently.
-
Ability to lift heavy objects, walk and stand for long periods of time.

Ability to communicate orally and in writing.
-
